Want to put a twist on the classic pecan pie? Add some chocolate. The addition of bittersweet chocolate makes it the perfect decadent, nutty dessert that’ll have you questioning your loyalty to the traditional pecan pie.

Chocolate Pecan Pie Bars

Crust

  • 1 cup of coconut flour
  • ½ cup of brown rice flour
  • ¼ teaspoon of salt
  • ½ cup of melted coconut oil

Filling

  • 1 cup of light brown sugar
  • ½ cup of maple syrup
  • ⅓ cup of coconut oil
  • ½ cup semisweet chocolate chips
  • ½ cup of coconut milk
  • 1 ½ cups of whole pecans
  • ¼ teaspoon of salt
  1. Preheat the oven to 350 degrees.
  2. Spray the 8 X 8 pan with non stick cooking spray and line it with parchment paper. In a bowl, mix together the crust ingredients until it forms a dough. Press the dough into the pan until you have an even layer of crust. Bake for 9-11 minutes, until it’s slightly golden brown. Remove and let cool.
  3. To make the filling, combine the brown sugar, maple syrup and coconut oil in a medium-sized sauce pan on medium heat. Bring to a boil and then let simmer for about a minute. While that’s simmering, melt the semisweet chocolate chips in a microwave safe bowl until silky and smooth (about 1-2 minutes). Remove the sugar mixture from the heat and stir in coconut milk, pecans and melted chocolate.
  4. Pour the filling onto the crust and bake for about 20-25 minutes. Remove from the oven and let cool for at least 2 hours before slicing. Top with your favorite ice cream and you’re good to go!
