Recently I got a request for more quick and easy dinner recipes. So as I looked in the fridge the other night and saw the rice from the night before, and a ghee-filled light bulb went off in my head: Leftover Gluten Free Fried Rice.
Highlights: Takes about 10 minute to prep and cook + one pan wonder
Leftover Gluten Free Fried Rice
- 1 teaspoon of ghee, olive oil or coconut oil
- 1.5 tablespoons of gluten free soy sauce
- 2-3 cups of leftover white or brown rice (preferably mixed with already cooked vegetables)
- 2 raw eggs scrambled
Heat up your frying pan on medium to high heat with a teaspoon of ghee for about 1 minute.
Drop in your leftover rice and let it sizzle for 2 minutes. Use a spatula to mix the rice so it doesn’t stick to the pan and heats up all over.
Scramble your eggs in a separate bowl then pour all over your rice. Add your 1.5 tablespoons of gluten free soy sauce and mix everything all together.
Let the fried rice sizzle for another 3-4 minutes and continue to mix the rice so every grain gets fried.
Spoon into your favorite dish and dig in.
