Thanks to my friend Emily, I am absolutely obsessed with the brand Against The Grain Gourmet. I first had their baguettes one day at brunch and pretty much couldn’t stop pulling off little pieces. Then she told me about the pizza crust, which I had seen at WholeFoods before, but sometimes I don’t like to try a product without checking out the brand. Well Em, you’ve got me hooked! The company is located in New England – Brattleboro, VT – and you know how much I love to support local brands!

This pizza crust is so delicious, and there are three cheeses baked right into the dough already. You can add extra cheese onto your pizza, but because it’s already baked in, I tend to keep it plain. You can put these toppings on pretty much any type of dough – it doesn’t have to be gluten free. You can even filled mushrooms tops with this mixture – that’s another post I’m working on, so more to come on that!

Easy Brussels Sprouts and Mushroom Pizza with Egg – serves 2-3 people

  • 1 gluten free crust from Against the Grain Gourmet
  • 2 cups of finely chopped brussels sprouts
  • 2 cups mushrooms
  • 1 tablespoon ghee
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 cloves of crush garlic
  • 3 eggs

Heat a saute pan on the stove on medium to high heat. Drop in your tablespoon of ghee and let that start to melt.

While that’s heating up, finely chop your brussels sprouts. We have a chopper from the Pampered Chef which works great, but you could also chop by hand or use a food processor if you have one. If you bought whole mushrooms, also chop those up into small pieces. I happen to buy already pre-sliced ones.

Once your pan is hot, add your brussels sprouts, mushrooms, garlic, salt and pepper. Sauté for about 15-17 minutes until the mixture is cooked through.

While your mixture is cooking, pre-heat your oven to 375 degrees. Put your pizza crust in the oven (on a cookie sheet) and broil it for about 2 minutes. Take it out and top with your brussels sprouts and mushrooms.

Crack and slowly drop your egg on top.

Pop in the oven and bake on 375 for about 10 minutes (or until egg is cooked to your liking). For the last few minutes, put it the oven on 500 degrees and broil the tops of the pizza for 1 minute.

Take out, cut and enjoy! I think I’ll add a little drizzle of of hot sauce.
