If you follow my blog, you know that sweet potatoes are one of my favorite vegetables – I eat them at least twice a week. I love them so much because they can be eaten for breakfast, lunch, dinner and even as a snack. Plus there are thousands of different recipes out there that use sweet potatoes – you can bake it whole in the oven, you can chop a few up and roast in the oven, or you can bake it and then puree it into a soup..the delicious list goes on and on.

You’ve probably seen a recipe or picture before with an egg dropped in the center of a piece of toast and some home fries on the side. You might have even seen an egg dropped inside of a sweet potato before, but have you ever given it a try? It’s extremely simple and you cook everything all in one pan. This recipe is also perfect if you are hosting brunch and want to make everyone their own individual sweet potato with egg. Read the below, and you’ll see how simple it is.

Egg Drop Sweet Potato Bake

Depending on how hungry you are you can do 1 SP per person or 1/2 SP per person

  • 1 medium sized sweet potato
  • 2 eggs
  • 1 tablespoon of olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper

Carefully cut your sweet potato in half and put the halves on either an oven safe cookie sheet or pan. I suggest lining your pan with tin foil or spraying it with non-stick spray so your sweet potato doesn’t stick! Drizzle on oil olive, salt and pepper.

Bake on 400 degrees for about 40 minutes. Depending on the size of your sweet potatoes, they will take roughly 40-50 minutes to cook. You want them soft enough so you are able to remove from the oven and mash up the center (see below).

Once they are done, take a fork or spoon and scrap the center. You aren’t removing any of the insides, more just mixing it up and making a whole for the egg. Crack your egg right in the center of the sweet potato. It’s okay if it spills over, mind did below too because my sweet potato wasn’t big enough. Cook for another 10-15 minutes.

Take out and add your favorite toppings: cheese, chives, sour cream, ketchup, hot sauce, whatever you like! I topped mine with just a little bit of ketchup!
