It’s beginning to look, smell and taste a lot like Christmas! We decorate our home every year for the holidays – white lights on the trees outside, multicolored lights on the tree inside, white lights up the staircase, wreath on the door, and stockings over the fire place. Everyone has their own traditions for decorating and prepping for the holidays, and it’s so important to keep those traditions going!

Since the holiday season is all about eating and indulging in all types of sweats, I thought I’d bring a little treat to your breakfast, afternoon snack or dessert.

Gluten Free Healthy Holiday Honey and Cranberry Granola

  • 2.5 cups of Bob’s Red Mill Old Fashion Gluten Free Oats
  • 1/4 cup Bob’s Red Mill Brown Flaxseed
  • 1/2 cup almond butter – I used Barney Butter – Smooth Almond Butter
  • 1/4 cup honey
  • 2 teaspoons of vanilla extract
  • 1/4 cup of cinnamon for mixture and to sprinkle on top
  • 2 tablespoons brown sugar
  • 1/2 cup dried cranberries

Makes about 3 cups of granola.

Pre-heat your oven to 350 degrees.

In a sauce pan on medium, melt your almond butter, honey and vanilla. Once the mixture starts to melt, use a whisk to mix it all together – keep whisking until the mixture is fully melted to make sure all of the flavors are combined.

In another bowl measure out and mix together your gluten free oats, flaxseeds, half the amount of cinnamon, and brown sugar.

Take your liquid mixture and add to your granola and flaxseed mixture. Mix everything all together.

For easy clean up, place a piece of parchment paper on your sheet pan and spray with non-stick cooking spray. Lay your granola mixture on top.

Bake in the oven for about 20-25 minutes – use a spatula to flip the mixture every 10 minutes to make sure it cooks evenly. After the first 15 minutes, sprinkle your cranberries over the mixture and put back into the oven.

Once it’s done, remove from the oven and let cool.

Then put it on top of yogurt in the morning or vanilla ice cream for a nighttime snack 🙂
