Grab those apples, cause today on the blog I give you apple spice bread! Gluten free of course. Look at those poor little apples left over from apple picking…I think I’ll make apple spice bread with them!

Gluten Free Apple Spice Bread (use an average size loaf pan 9 x 5)
3 small apples – diced
1/2 cup vegetable oil
2 eggs
1/2 tablespoon vanilla
1/2 tablespoon honey
1/2 cup brown sugar (plus few extra tablespoons for topping)
1 cup gluten free flour – I use Bob Red Mills (or regular all purpose flour)
2 tablespoons cinnamon
1 teaspoon baking soda

Pre-heat oven to 350 degrees.

Peal, chop and dice your apples.

In a separate bowl, toss your apples with the cinnamon.

Combine in mixer, sugar, oil, vanilla, honey then eggs. Be careful, not over mix your eggs.

Add your dry ingredients: GF flour and baking soda.

Spray you loaf pan or line with non-stick parchment paper.

Spoon in your batter. Then sprinkle with as much brown sugar as your heart desires. Mine desires a lot.

This is a slow bake, but I promise it’s worth that. Pop that baby in the oven for 45-50 minutes or until your fork comes out clean!
