Too many times I find myself skipping breakfast or grabbing an apple, and lets be honest it just isn’t enough. Especially when I run or do CrossFit in the morning, my body and mind need food. Good, filling food, so at 10 am I’m not saying to my co-workers how hungry I am.

I’ve seen this done on Pinterest before, so I’m totally not taking any credit for creating this idea – rather I’m just spreading the breakfast love.

Veggie and Egg To-Go Cups
1 egg per cupcake tin (so in this case I used 6 eggs)
2 peppers
1/2 cup spinach
1 teaspoon pepper

Whisk all together and drop into cupcake tins. Make sure to spray the tins before so they don’t stick.

Pop into the oven at 400 for 15-20 minutes.

Take out, let cool, enjoy! Oh and these are also great snacks before a workout!
