Breakfast is one of my favorite meals of the day, however, during the week I really don’t have a lot of free time to whip up some bacon and eggs. Luckily Sunday mornings are the perfect time for a big breakfast – the classic bacon and eggs, and some gluten free pancakes.
We make our bacon in the oven – comes out crispy and delicious every time!
Now onto the main dish….pancakes!
Dee’s Gluten Free Pancakes – makes 8-10 servings
- 2 cups Trader Joe’s Gluten Free All-Purpose Flour
- 3 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup milk
- 2 teaspoons vanilla
- 2 tablespoons butter melted
- 1 tablespoon vegetable oil
- 1 large egg
Combine all ingredients into a mixing bowl. Get a sauce pan on medium heat going and spray with non-stick cooking spray. Depending on how hot your stove top gets, each pancake should cook for about 1-2 minutes on each side.
