Cauliflower Pizza Crust

This recipe takes me back to my Italian roots – I’m talking about pizza my friends. Homemade, delicious, cheesy pizza! But this recipe has a little twist to it, instead of using flour, I used ground up cauliflower, making it a healthier (gluten free) option. There are many different recipes out there, so after a little research and a few tries, I give you the following recipe.

Cauliflower Crust Pizza

  • 1 medium size cauliflower head
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon oregano
  • 1 teaspoon chopped or ground basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 egg

Wash your cauliflower and remove the leaves. When it comes to shredding the cauliflower, there are a few different ways depending on the tools you have. The first is if have a food processor, pop chunks of the cauliflower into the food processor, and mix until it looks like flour. If you don’t have a food processor, you can use a cheese grater. Just take very small pieces of the cauliflower and run it against the grater to get a flour like texture.

Next, pop your microwave safe bowl containing the cauliflower into the microwave and cook for four minutes. Once done, let cool for about 15-20 minutes. Once your cauliflower is cool, put half of the mixture into a dish towel and ring out the excess water into the sink. This step is VERY important because you want to make sure you remove as much moisture as possible, if not (and this happened to me the first time), your mixture won’t stay together.

Once you’ve done that, it’s time to add the spices and cheese. At this time, you can pre-heat your oven to 400 degrees.

Mix everything together (your hands are your best tools) and transfer your mixture to a baking sheet covered in parchment paper. Flatten out the “dough” with your hands, and pop in the oven for about 10-12 minutes.

Once your crust starts browning around the edges, remove from the oven and top with your cheese and other desired toppings. Today I made it with sautéed onions, mushrooms and artichoke hearts. Then back into the oven it goes until it finishes cooking.
