Even though the roast beef is usually the star of the meal, today, the brussel sprouts stole the show. Stuffed brussel sprouts I should add!

Thanks to Cooking Stoned, I had a great recipe to follow.

First slice your brussel sprouts in half. Boil them middle side down for about 10 minutes. You want to cook them enough so you can easily core out the center.


After your brussel sprouts are cooked, core out the centers onto a cutting board. Chop them up and add to a bowl.



Go ahead and add your ricotta cheese to your mixture as well as your spices.


I can’t even begin to explain to you how out of the world delicious this mixture is. I wanted to eat it all, but I thought it would be weird to just serve brussel sprouts unstuffed 🙂

Go ahead and stuff your brussel sprouts with the mixture and put them in the oven. My mom and i worked together on this – shes a great model in my pictures. Bake for about 20 minutes and to give your sprouts a crunch finish, broil them for a minute.
