There are two types of neighbors in the world: one, you want to shut the blinds and hide when you see them walking towards your house or two, you frequently pop over their house for coffee, wine and the occasional gossip. Luckily, my neighbors are the second kind. It’s always reassuring to know that you’ve got great neighbors that aren’t going to steal your newspaper, run over your lawn or yell at your dog when it runs into their yard.

So, when my awesome neighbor’s niece came home for Thanksgiving break, I wanted to make her a little something to take back to school. Although I didn’t realize it at first why she asked me to put elephants on top of the cupcakes…it turns out its the university’s mascot.

So here you have it, vanilla cupcakes topped with vanilla buttercream and garnished with colorful fondant elephants. I used a cookie cutter to cut out the elephant.
