It just wouldn’t be Thanksgiving without a warm, sweet, fresh Apple Pie on the table. But I decided to put a twist on the classic and make mini Apple Pies this year.
Let me paint you a picture: Homemade crust cups, filled with fresh, chopped apples tossed with cinnamon, nutmeg, and brown sugar, baked at 375 for 30 minutes, cooled to room temperature and then topped with a scoop of vanilla ice cream. Is your mouth watering yet?
I can’t take all the credit for this delicious dessert, I adopted the recipe from Knit and Bake.
First I made the crust.. Now if you’re thinking “homemade crust are you crazy?” this recipe is extremely easy and will make a huge difference when it comes to baking your pies.
After you make your dough, wrap it in plastic wrap and pop it in the fridge for 30 minutes. As the dough is forming, start chopping your apple. As you’ll realize, I 7X this recipe, so make sure to add the right amount of ingredients based on the amount of apples you use.
Spray your cupcake trays, so the dough doesn’t stick, and roll out your dough. Use a cupcake tin to measure the circles. Add in the filing, but make sure not to over fill them or they will over flow! Lastly, cut little strips of dough and crisscross them on top of the pies.
I can honestly say Thanksgiving is my favorite holiday..I even like it better than Christmas. Hope everyone had a great Thanksgiving! I know I did!
We made our turkey two ways this year, fried and traditional oven roasted. Hats off to my uncle for the fried turkey because it was out of this world! I am so thankful to be able to share a wonderful meal with my family…sometimes 🙂
