For my cousin’s birthday party, I wanted to try something a little different. My aunt had already ordered a cake, so instead of going my usual cupcake route, I decided to make Chocolate Chip Cookie Sandwiches stuffed with chocolate chip cookie batter. DO NOT PANIC! The raw chocolate chip cookie batter I used to stuff the cookie sandwiches with have no eggs in them, so they are safe to eat!!
I took this recipe from the author of the blog Two Peas & a Pod, who had adopted the recipe from The Cookie Dough Lover’s Cookbook! What I love about this cookbook is that almost all the recipes do not use eggs! There are many ways to substitute with healthier ingredients such as yogurt, banana, apple sauce, etc. BUTTT healthy does not describe what I made today….just chocolatey goodness!!

Mix the filling and use a spoon to spread it between two ‘cooled’ chocolate chip cookies!
