My plan was to make red velvet cupcakes to bring to my aunts house in celebration of Mother’s Day, however, when I went to look in my cabinet, I realized I didn’t have any cupcake tins. You’d think that because I love to make cupcakes I would have endless amounts of cupcake tins, but think again. It’s okay, next time I go to the store I’ll pick up a JUMBO SIZE package of cupcake tins.
I had already started making the cake, and everyone who knows me, knows that I would NEVER waste cake. So I thought maybe I could make a regular cake and frost it..nah that’s boring. So I decided to make red velvet cake balls.
First you make red velvet cake mix using any red velvet cake recipe. Bake the cake in a cake pan and let cool.
Next crumble up the cake into a bowl and mix in your cream cheese frosting. The warmth of your hands may make the mixture warm, so just pop it in the fridge for 30 minutes or until the mixture is cold.
Form the red velvet/cream cheese mixture into balls and place on a cookie sheet. Pop the cake balls in the fridge for about 30-40 minutes or until cold.
Now here comes the fun part…you can decorate, dip, drizzle, sprinkle your cake balls anyway you want! My Mom helped me dip them in milk chocolate and then sprinkled them with colored sprinkles.
